The Olive Oil Mills of Kymi
Along with the cultivation of olives, a form of craft also developed in the region, that of olive presses.
In its archaic form, that is, in the one that uses the power of animals to crush the olive fruit, it was widely spread in the region.
For many years, the olive presses of Kymi worked with primitive techniques. Flat wooden threshing floors, wooden buckets, wooden alums, a wooden axle in the center of the threshing floor, which was patiently turned by strong horses, which were guided by the thresher, until the olives were melted, mashed and the pulp was put into woolen bags that were stacked by the stacker and poured boiling water by the millers who turned the wooden press with force, with both their hands.
The thresher wore a sackcloth apron, the plait, fastened around his waist with thick string. The plait dripped oil all over.
Until 1970 and earlier, 45 oil mills operated in the Kymi region. Of these, most and the oldest were horse-drawn or hand-operated.
Two of them operated from the mid-19th century until the end of the 1960s and in the village of Ano Potamia.
